Arca

Focusing on local produce and ingredients, the micro-seasonal food of Arca reflects the fauna and flora of its native land. It’s the flagship restaurant of Mexican American chef Jose Luis Hinostroza, who was born in Southern California and grew up in one of the richest agricultural regions of America and the birthplace of the farm-to-table culinary movement. His career includes many famous restaurants, with Noma stealing the show. Here local products and open fire have the first word, in order to create bold dishes with explosive flavours, utterly in tune with the Mexican roots and traditions and designed to be shared amongst friends and families over a communal table. The outdoor ambiance is that of a chic and atmospheric evening picnic in the jungle, setting an elegant tempo but without any feeling of pretentiousness. Note to sample the homemade sourdough bread, which is so good that is sells out by early evening.
